Teresa’s Keto Queso Dip

  • 2 tablespoons butter

  • 1/2 medium onion, finely chopped

  • 1 medium jalapeno, minced

  • 1 teaspoon salt

  • ¾ cup heavy cream

  • ¼ cup water

  • 8 ounces of white American Cheese ( can be substituted by Cream Cheese)

  • 8 ounces shredded cheddar

  • 4 ounces shredded Monterey jack

 

Melt the butter in a pot over medium heat.

Stir in the onion and jalapeno and cook until the vegetables have softened.

Add the white American cheese, heavy cream, salt, and water to the pan and cook, stirring constantly, over medium heat until the cheese has melted.

Reduce heat to low and add the shredded cheese a handful at a time, whisking constantly, until all of the cheese has been added and the sauce is smooth and creamy.

Add additional water as desired to reach the consistency you prefer.
